My dad had this reaction against casseroles. I don't know if it was a childhood trauma, a snobbiness after going to culinary school or just a prefernce for large hunks of meat unfettered by sauce or starch. The only aspect even resembling a casserole I ate until I was in college was macaroni and cheese made lovingly with velveeta, potato chips and frozen peas on special occasions a team a few times a year (notably, Christmas Eve and the Wednesday before Thanksgiving, and maybe a birthday :) In college my sister and I discovered the joy that is a casserole. Wait, meat, and pasta or rice, a gravy, a crispy topping, and you can put whatever you have in there???? Yes please! We ate tuna noodle casseroles and chicken rice casseroles and tater tot hot dishes and we loved it. Unfortunately, I was never satisfied with the idea of condensed cream of whatever soup. My dad's kitchen had taught me that there were better options :) But my attempts at making casseroles off the can had always resulted in...
