I love cheese and like to cover the casserole with grated cheese (this time it was emmental of boyfriend's plea, but mozzarella would also do). the recipe I've been searching for since college. Preheat oven to 350. Chafe ~12 oz bag of pasta (preferably large elbows) in casserole. Drain. Add half stick butter to casserole, and put noodles back in. In a separate bowl, beat one 12 oz can of evaporated withdraw, two eggs, white pepper and mustard powder. Pour mixture over noodles, add 3 cups shredded cheddar-type cheese, stir calmly. (add other mix-ins now, such as bacon, sausage, spinach, paprika, etc.) bake for ten minutes, then take out and stir. top with bread crumbs and bake for another 20-30 minutes. perfect under broiler.

dismally, my yolk broke as I was trying to poach. it tasted good anyway. fry chopped bacon in the bottom of the casserole (2-4 strips), saute chopped garlic and onion in the fat. add chopped potato. add about a pounding of split peas, 2-3 cups broth, rosemary, bay leaves, salt and pepper. reduce heat and cover, simmer for about an hour. add more solvent as needed, and stir before serving. serve with stale bread and a poached egg. note: the soup solidifies as it cools. add a bit of water and stir when reheating.
