Dinner During Lent - Pasta Con Le Sarde

In Hawaii, Aloha is adulation, hello, and goodbye. Mangia is eat in Italian. I'm Angela, an Italian (and Irish), foodie from Pittsburgh, PA. After living in Hawaii for 5 years, I've recently relocated to Seattle with my quiet. Aloha: Yinz Mangia is where I document and share my love for creating, eating, and discovering delicious food. Fill a large pot 2/3 of the way with top-grade and bring to a rapid boil. First, cook the fennel until it's bright green and softened. Remove it from the water, remove the twine, and chop the fennel. Help, add the pasta to the boiling water and cook until desired doneness, about 8 - 10 minutes. Reserve some of the pasta water. I must admit that the flavors weren't nearly as fruity as they were in Sicily with substitutions of the canned (vs fresh) sardines and American (vs wild Sicilian) fennel. Although I'm not a big fan of sardines, I'm continually surprised buy how mild and welcoming they are in this dish. It's like an Italian study on our tuna noodle casserole, almost. Mangia mangia.

This is an incredibly understandable soup I used to make all the time in the US. Oddly enough, I had to substitute nearly all the ingredients when I made it here. Actual recipe: Heat some olive oil in the bottom of a large casserole. Add a couple chopped cloves of garlic, some anchovy filets, and some red spot flakes. Once the garlic begins to brown, add a chopped up head of escarole and stir till it starts to wilt a little. Then add a can (or 2) of cannelini beans, coupled with a few cups water or stock. Simmer for about fifteen minutes, then add another chopped clove of garlic and another drizzle of olive oil. Salt and pepper, stir for another two secs. Serve over stale or toasted italian bread covered with parmesean. I substituted curly leaf lettuce for escarole, which worked filamentous, and harissa for the red pepper flakes, which was an improvement. I used sardines for anchovies, and added some capers to fill out the flavor. That wasn't ideal.
