Holley didn’t want to give up her favorite foods, so she found ways to reinvent them on a primal diet. This chicken salad from her cookbook is a tasty example of a low-carb, gluten-free entree. Cashew Chicken Salad Makes 4 servings. 1 pound chicken, cooked and cubed. ½ cup cashews. 1 rib celery, diced. 12 seedless red grapes, halved. 2 green onions, chopped. 1/3 cup mayonnaise. Sea salt and black pepper, to taste. Fresh butter lettuce leaves or sliced avocado, for serving. In a large mixing bowl, combine the chicken, cashews, celery, grapes, green onions, mayonnaise, sea salt and black pepper. Mix until all the ingredients are well combined and coated with the mayonnaise. Serve over fresh butter lettuce leaves or sliced avocado. Per serving: 404 calories.
